Since coming back from China in January, our son Mark has been doing some Chinese cooking. To be precise about it, he has perfected and expanded one particular dish. During the first half of the Illinois-Louisville game, I went to the grocery store to buy some fresh shrimp, chili paste and soy sauce. Mark finished his masterpiece with about 15 minutes left in the game. There doesn't appear to be any particular recipe involved although the result is very tasty. And hot. Very hot. Tonight was the fourth or fifth time he has served his creation, and it was by far the hottest yet. The dish features rice noodles, which I don't remember ever having before our trip to China but I'm hooked on them now. Tonight Mark added chicken, shrimp, peapods, baby corn, chili paste, garlic and soy sauce. When I asked Mark what he called his culinary masterpiece, he shrugged and said it was a version of Chow Fung. "It's Mark's Madness," Marlene immediately replied.

It was so good I had two helpings and part of a third. In case you didn't know, Illinois won, which means they play for the National Championship on Monday night. I picked them to beat North Carolina when I filled out my bracket several week ago. I'm wide awake right now and I fully expect to be enjoying Mark's Madness all night long.
