Mediterranean Fish Stew
If you are really into Greek food, you can top this stew with crumbled feta cheese, fresh tomatoes and chopped red onion.

Makes 6 Servings

Ingredients

2 Teaspoons Olive Oil
1 Small Onion, chopped
4 Cloves Garlic, minced well
1 Lb Firm Fish, chopped into -inch chunks
1 Cup Fresh Spinach, finely chopped
Salt And Pepper
3 Cans Chicken Or 1 Bottle Of Clam Juice
1 Cup Tomato Juice
2 Cans Diced Tomatoes, use juice
1 Can Garbanzo Beans
2 Cups Cooked Rice
1 Teaspoon Oregano
1 Teaspoon Basil

Preparation

In a large sauce pan, saut the onion until soft, add the garlic, fish and spinach and heat until fish is no longer transparent about 5 minutes. Taste and season lightly. Add the broth, tomatoes with juice, beans, rice and herbs. Heat for another 5 minutes. Garnish with fresh vegetables.

Nutritional Info: Each 3/4 cup serving ~ 365 calories ~ 37 grams protein ~ 1 gram fat ~ 45 mg sodium ~ 234 mg. potassium ~ 6 grams fiber.
